Thai Larb Salad & Thai Sticky Rice: Thai Cooking at Home
This is a simple and refreshing Thai dish that I love to make. My family loves it and there is never any leftovers. When we want something light, we eat it as a lettuce wrap. If we want a little bit more substantial, we eat it with a bowl of steamed Jasmine rice or Thai Sticky Rice. I love the combination of the cilantro and mint together and Thai cooking signature fish sauce and lime combination.

Thai Larb Salad
Ingredients
- 1 lb ground pork or ground chicken
- 1/2-1 c shallot or red onion, thinly sliced
- 1/4 c green onion
- 1/2-1 c cilantro, chopped
- 1/2-1 c mint, chopped
- 1 T palm sugar or granulated sugar
- 3 T fish sauce
- 2 juicy limes
- 1 T toasted rice powder
- optional Thai Chili Pepper or Crushed Chili Flakes for heat
Instructions
- In a heated pan with a little oil, sauté ground chicken (or pork) to cooked.
- Add 1 T palm sugar or granulated sugar and stir into cooked ground chicken. When cooked, remove from heat.
- In a mixing bowl, add 3 T fish sauce and juice of 2 limes. Add ingredients, shallots to mint.
- With a slotted spoon, add ground chicken to mixing bowl (do not add in the cooked chicken juice).
- Mix all ingredients well. Add chopped Thai Chili Pepper to your desired heat or crushed chili pepper flakes. Add toasted rice powder.
- Serve on top lettuce leaf as a lettuce wrap or with a hot bowl of steamed Jasmine rice or Thai sticky rice.
Thai Sticky Rice
Ingredients
- 3 c Glutinous Rice (Sweet Rice)
Instructions
- Place 3 cups of glutinous rice in strainer. Clean rice with water until the water runs clear. Notice that the rice grains are opaque.
- Put cleaned rice in a pot and add water until rice is covered.
- Let sit for at least 2-4 hours.
- After allotted time, pour rice into a strainer. Level rice.
- Fill pot with water about 1/2". Place strainer to nestle into pot. Place on a burner and on medium-high heat, boil the water for 15 minutes to steam the glutinous rice. Cover the rice with a lid while steaming.
- After 15 minutes, carefully lift lid to check on rice. Rice should be translucent and sticky throughout. If there are some opaque grains and non-sticky, place lid back on and steam for another 7-8 minutes until rice is translucent and sticky.
