Korean Cucumber Salad
Q Day 66: How’s everyone doing? Well, looks like California is slowly getting back into business while still being cautious. I haven’t been following the news to keep my mental balance in check. As you can tell, I’ve been cooking, baking and gardening a lot. Check out my IG stories to see my container vegetable garden that I started up. I’m eager to watch the process. Anyways, have you ever had Korean Cucumber Salad? It’s very light and refreshing! It’s been a staple in my refrigerator when I don’t feel like making a full on salad and just want something small on the side. It’s the perfect crunch. Here’s my recipe below.
You’ll need:
- 1 English Cucumber
- 1/2 tsp salt
- 1/4 to 1/2 tsp sugar
- 1/2 cup rice vinegar
- 1 clove finely minced garlic
- 1 or 2 green onions, finely chopped
- hot pepper flakes, if desired
What to do:
- Slice cucumber thinly. Place slices in a colander and sprinkle with salt, but don’t make them too salty, less is more… toss!
- Put a place under the colander to catch excess water and set the colander aside for at least 2 hours. You can leave it longer or overnight to achieve a more pickled dish. Salting the cucumber releases the water and creates a crunchy cucumber!
- After the time, taste a slice to make sure it’s not too salty. If it’s too salty, squeeze the cucumbers in a paper towel to remove some of the saltiness.
- In a separate bowl, combine the sugar, rice vinegar, garlic, green onions and hot pepper.
- Add the cucumber slices to the mixture and mix well.
- Chill in the fridge for at least an hour. It can keep for a few days to soak up that marinade for a more flavorful, pickled taste.
